Once the grand dame that set the yardstick for luxury hospitality in the erstwhile colony, the Peninsula Hong Kong still reigns with a dedication to service so fastidious, a taste for refinement so regal and a regard for guests so uncommon. The Peninsula remains the name to beat across cities that bear its presence and name.

Another oldee in the sleepless port, this Grand Hyatt exudes charm and easy comfort, with well-designed modern rooms, a fabulous spa, and a stupendous club lounge at its crown that remains one of Hong Kong's best, dishing out stately service, intoxicating cocktails and some the most comely views of the harbour at dusk.

The Murray may be one of the most expensive hotels ever raised in Hong Kong but a visit to the erstwhile office building in a most enigmatic part of Central left one wondering why the hotel is bedecked with a flurry of falsies instead of de rigeur fresh blooms. Nonetheless, the modish designs of the rooms are comely and comfortable, greatly adding to the overall appeal of this property.

Borrowing from the European sensibilities from its English forebears, the rooms and suites here are smallish and comparmentalised, but not uncomfortable. Tea is hence also a cherished tradition, as is cocktail at six and a meal at its 3-stared Tang Court.

Majorly pitched as an Andre Fu designed mantlepiece, this bay-front property may be dripping with views but entice with little else. Its location is a tad off the axis of action in Hong Kong and its ID does not bear any conception nor prominence to elicit excitement. Still, having a cocktail in plain view of the bay vista is a good enough persuasion for check-in.

Once the height of glamour in Hong Kong, it is disheartening to revisit Island Shang at the close of the last decade to find its room neglected, its air dank and its service spiraling down towards ignominy. Maybe its perpetually high occupancy may have something to do with its downward slide, but it is always a shame to visit a cherished hotel just to find a shell sans spirit.
